I'm struggling to feather a thread at the start and end of the thread. (taper in and out thread) Is there a way I can do this easily without having to set up a separate profile?

No, you need a separate profile and feature.
Here's a short demo in one of my videos that should show the steps. Now that we have actual threads in the Hole tool most of the video is obsolete but creating the thread end taper should work with the current thread features.

Actually, the new modeled thread feature already creates the end taper/run out for you as well as a chamfer on the end of the threaded stud.
So, unless someone has not updated/upgraded to a version that includes the new modeled thread feature, that whole video is kinda obsolete. But it still demonstrates how to model threads without the modeled thread feature in the Hole/External thread tool.
