Want to use sketch to mate with a plane

I have a sketch I created in an assembly, but I need to use that sketch to align with a plane. The only issue is that when I exit the sketch, it is not visible to the assembly, so I can't mate it with the plane I want.

Sounds like the display of sketches is turned off. Go to the View menu and find/select Sketches, or use the shortcut Ctrl+Shift+K.

It doesn't work in assemblies. CTRL+Shift+K doesn't work as it is already on and I still can't see my sketches in the assembly

Sounds like you are working in a top down assembly context. You'll need to RMB click on the part and select Show Reference Geometry from the pop up menu when in an assembly and you should see parts reference planes, axes and points. IF you need to reference a part sketch in the context of an assembly I think you'll need to create some reference planes in the part first then use them to align to the assemblies planes.
